Oh So Delicious: Waffles!


Aunt Jan and Uncle Len's house is full of fun, laughter, rest, and, if you're lucky, waffles! Really, any food you have at their house is wonderful, but, for some reason, waffles have made a pretty strong impression on me. Aunt Jan would sometimes make them for breakfast when we would stay, and they were oh so delicious!

Saturday, I decided to make waffles for breakfast, and it reminded me of those mornings at Aunt Jan and Uncle Len's. You really should have been there! Since I can't invite you all over for waffles at our place, I thought I would at least share the recipe...

Waffles from Better Homes and Gardens Cookbook

1 3/4 cups all-purpose flour
2 Tbsp sugar
1 Tbsp baking powder
1/4 tsp salt
2 eggs
1 3/4 cups milk
1/2 cup cooking oil or butter, melted
1 tsp vanilla

In a medium bowl, stir together first four ingredients. Make a well in the center and set aside.
In another medium bowl, beat eggs slightly, stir in milk, oil and vanilla. Add egg mixture all at once to the flour mixture. Stir just until moistened (batter will be slightly lumpy)
Pour batter onto lightly greased waffle iron and cook according to the waffle iron instructions. When done, use a fork to remove the waffle and repeat.


I let some frozen raspberries thaw in a bowl, muddled them, and spooned them onto top of my stack of waffles, along with syrup. Delicious!
